Do you remember those super fluffy slider rolls I Do you remember those super fluffy slider rolls I made in my last video?

Well, they are the stars of the show for my toddler’s lunchbox today! And not in the way you might think: I had an elaborate lunch planned for him to showcase these slider rolls, but he simply wanted a PB&J, so that’s what I gave him.

I also sliced up an apple, tossed in some seaweed, and that was it! Honestly, less work for me this morning, which is never a bad thing!

Easy Italian Sandwich–Inspired Bean Salad 🥗 This Easy Italian Sandwich–Inspired Bean Salad 🥗

This is one of those throw it together and it still feels special kind of meals!

Inspired by the grinder salad that was everywhere last year, I made this easy, family-friendly, and perfect for real life. Beans, greens, a simple vinaigrette, are all easy additions and you can also add whatever extras you love.

Save this for later + share with someone who loves an easy lunch or dinner idea.

Ingredients:

1 finely chopped red onion

1 red bell pepper

3-4 cups of kale, chopped

2-3 cups of arugula

1/2 cup roasted red bell pepper

Salt, pepper, Italian seasoning, and garlic powder to taste (or about 1/2 teaspoon of each)

Cheese of your choice (I like feta or a nice smoked white cheddar cubed or broken up)

1/4 good olive oil

1/4 red wine vinegar

Does breakfast get you excited to start your day l Does breakfast get you excited to start your day like it does for me? My little one and I talk about what we want to eat the night before because we are such foodies and I love it!

To make this easy Skillet Granola you’ll need:

1 teaspoon olive oil or a neutral oil of your choice
1 cup rolled oats
1 teaspoon hemp seeds
1 tablespoon slivered almonds
1 teaspoon honey or to taste
Salt to taste

And that’s it! A simple hack to making breakfast super simple when you don’t have time to make something more elaborate.

Want a full granola recipe though? Let me know and I’ll make a video for you!

German kindergarten 🇩🇪🥪 We are back to school aft German kindergarten 🇩🇪🥪

We are back to school after a long winter break filled with Christmas markets, snow days, and slow mornings together.

While I’ll miss having Gideon home all day, a few hours apart is good for both of us.

Here’s to today’s simple lunch and a little glimpse into our routine abroad.

Let’s take a tour of my spice drawer. What started Let’s take a tour of my spice drawer. What started as a small area on a shelf in my kitchen has morphed into an entire drawer full of spice containers, ranging from simple ingredients like black pepper to more interesting flavors like curry powder.

I can’t wait to cook more and share new recipes with you all using these items!

And if you have any information on where to get specialty spices and international ingredients, such as sumac, in the Stuttgart area, please let me know. I am sure local stores have ghee, but I am not sure where it would be located in the stores, so information on that would be greatly appreciated as well!

What does your spice collection look like? And is it wild for me to already have other spices on my list of things to buy?
