These blueberry muffins fall firmly into the second category.

I’ve made them so many times that I no longer need to pull out the cookbook. My toddler asks for them. My husband grabs them for a quick breakfast. And I often find myself sneaking one alongside a cup of tea in the afternoon.

Before this recipe, I wouldn’t have called myself a muffin person. Give me a slice of cake, a homemade cookie, or a warm cinnamon roll, and I’m happy. Muffins always felt a little underwhelming to me. They were either too sweet, too dry, or simply forgettable.

Then I found Kay Chun’s blueberry muffin recipe in the 2014 edition of Food & Wine’s An Entire Year of Recipes.

After making it several times, I started making a few small adjustments to suit my family’s tastes and the ingredients I typically keep on hand. I swapped in buttermilk for extra richness and tenderness and began using dark brown sugar instead of light brown sugar for a deeper flavor.

The result is a muffin that feels bakery-worthy but still approachable enough for a busy weekday morning.

How to Make These Blueberry Muffins

The process couldn’t be simpler. Start by whisking together the flour, baking powder, and salt in a large bowl.

In a separate bowl, combine the melted butter, buttermilk, granulated sugar, dark brown sugar, lemon zest, and eggs until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix. A few lumps are completely fine and will help keep the muffins tender. Fold in the blueberries.

Divide the batter evenly among your prepared muffin cups and bake until golden brown and a toothpick inserted into the center comes out clean. The hardest part is waiting for them to cool.

Storage Tips

Store muffins in an airtight container at room temperature for up to three days. For longer storage, freeze them individually and thaw as needed. A quick warm-up in the microwave or oven brings them right back to life.

Blueberry Muffins

These are the best blueberry muffins I have ever made. They are lightly sweetened with a tangy bite. And they really stand out by being slightly crisp on the top and fluffy throughout the sides and center. Perfect for any occasion, meal prep, and even as a sweet, nourishing treat inside a lunchbox.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon of salt
  • 1 stick of unsalted butter melted and cooled
  • ½ buttermilk
  • ¾ cup of granulated sugar
  • ¼ cup dark brown sugar
  • 1 teaspoon finely grated lemon zest
  • 2 large eggs
  • 1 ½ cups blueberries

Instructions
 

  • Preheat the oven to 375℉ and fill 12 muffin cups with paper liners.
  • In a large bowl, whisk the flour with the baking powder and salt.
  • In a medium bowl, whisk the butter with the buttermilk, both sugars, the lemon zest, and eggs.
  • Add the wet ingredients to the dry ingredients, and whisk until just combined.
  • Fold in the blueberries.
  • Spoon the batter into the muffin cups and bake for 25 minutes or until a toothpick comes out clean and muffins are golden.
  • Let cool for 5 minutes, then remove them from the pan and let them fully cool on a rack.
