Let’s celebrate my husband’s birthday with a peach Let’s celebrate my husband’s birthday with a peach cake!

This video has been in the drafts since my husband’s big day passed, but we had a lot of fun celebrating him when we did! When I asked him what type of cake I could make for him, he said a peach cake, and I immediately said “Huh” 😂. I then tried to convince him to let me make him a strawberry cake because I knew how to do that. So when I found peaches at the store, I knew I had to truly honor his wishes, and I am so glad I did! 

This recipe is still in the testing phase, so there isn’t one yet! But I will share the recipe for the cream cheese frosting I made for this delicious treat below. 

Peach Frosting Ingredients and Measurements: 
8 ounces cream cheese; room temperature
1 cup unsalted butter; room temperature
1 teaspoon vanilla paste or vanilla extract
1 teaspoon lemon juice (optional - but adds a nice tartness) 
pinch of salt to 1/4 teaspoon
6 to 7 cups powdered sugar, sifted
1/4-1/2 cup of fresh peach puree (less for a stiffer frosting and more for a looser texture)

This was our first real trip outside of Germany in This was our first real trip outside of Germany in about a year and a half, and it felt so good to get back on the road together. I’m excited to finally share a little recap with you!

10-Year Anniversary
The biggest reason for this trip was to celebrate our wedding anniversary. We stayed at the Brussels Marriott Hotel Grand Place, and the service was truly exceptional. The team even conspired with my husband to surprise us with treats and a complimentary breakfast during our stay, such a thoughtful touch.

Foodie Heaven
Another big reason we came to Brussels? The food! We wanted to explore the food scene, revisit some favorites, and of course, try the famous Belgian waffles and fries. One of the meals we enjoyed was at 📍 Namaste Indian Restaurant.

📍Musical Instruments Museum
This was such a fun stop. As a fellow musician, I loved learning about the history of instruments while listening to recordings of music from around the world spanning centuries.

📍Frites Atelier
With so many fry shops in Brussels, this one stood out as a delicious experience.

📍Maison Dandoy
Trying authentic Belgian waffles was one of the main inspirations for this trip. I wanted to experience them myself so I could recreate them at home, and the recipe I developed afterward is now on my blog!

The City of Brussels
Brussels is such a fascinating city. We were only there for about 48 hours, so there’s still so much we didn’t see. We’d definitely love to return someday.

Fun Brussels Facts:
• Languages: Dutch, French, and German
• Famous foods: fries (with mayo!), waffles, chocolates, and over 800 types of beer
• Iconic symbols: Manneken Pis (the famous peeing boy statue) and Zinneke Pis (the peeing dog!)

Today, I am putting that sourdough loaf we made in Today, I am putting that sourdough loaf we made in our last video to the test and making the ultimate breakfast toast with avocado, egg, and all the fixings! 

My tip: season as you go, so every bite has flavor. Sometimes I will use a sesame-based seasoning or even something spicy. Today I just opted for old faithful, salt and pepper. Boring, I know, but it hit the spot!
