But I was barely awake, so we had to circle back a little later when I had a plan.⁠
⁠
On the menu: Poached eggs in tomato sauce with wilted spinach, garlic, and cumin, inspired by a recipe from my Food & Wine cookbook.⁠
⁠
He asked for cereal… but I like to keep mornings savory when possible. Plus, the real win? I managed to hide the spinach in all that rich tomato sauce.⁠

Served it with leftover homemade focaccia. It was client-approved. So it’s officially being added to our menu rotation. ⁠
⁠
This post is part of my Private Chef & Personal Assistant Diaries: Living in Germany, a fun series where I share what it’s like to cater to a tiny, demanding, and sometimes bougie client abroad.⁠

🍳 Poached Eggs in Tomato Sauce⁠
⁠
Ingredients:⁠
⁠
- 1 tbsp butter⁠
- 1 small onion, chopped⁠
- 1 garlic clove, minced⁠
- 2 handfuls of spinach⁠
- 1 (14 oz) can crushed tomatoes (with juices)⁠
- ½ tsp cumin⁠
- Salt & pepper to taste⁠
- 4 eggs⁠
- Fresh parsley (for garnish)⁠
- Grilled bread or focaccia (for serving)⁠

Directions:⁠
⁠
1. In a saucepan, melt butter. Add onion + garlic. Sauté over medium heat until soft and golden (about 8 mins).⁠
2. Add spinach and cook until wilted.⁠
3. Stir in crushed tomatoes and cumin. Bring to a light boil, then reduce heat and simmer for 10 minutes to thicken.⁠
4. Season with salt and pepper.⁠
5. Make 4 small wells in the sauce and crack eggs into them. Cover and simmer on low until whites are set and yolks are runny (about 7 mins). If you prefer your yolks fully set, cook them for about 10 mins, or until the yolks are more to your preference. ⁠
6. Garnish with parsley. Serve immediately with toasted bread or focaccia.⁠

Why aren’t we traveling as much right now?⁠

After moving to Germany in the fall and settling into our forever ‘Germany’ home here, we’re taking things slow—especially with a toddler! ⁠
⁠
We’ve been enjoying some slow travel, exploring Stuttgart bit by bit, and really taking the time to settle in as a family. This city has so much to offer when we can get out and explore!⁠

We’re also preparing to enroll our little one in school soon, which means shifting into a more structured routine and creating stability. We’re excited for him to make new friends, learn German, and enjoy all the fun that comes with it!⁠

As for me, having a kitchen again has brought me so much joy. Cooking, baking, and filming our meals has reignited my love for content creation. ⁠

Right now, building healthy routines as a family is the most important thing. Travel is definitely on the horizon, and we’re already dreaming up our next adventures. Stay tuned! 💛⁠

Sometimes, meal prep doesn’t happen on Sundays i Sometimes, meal prep doesn’t happen on Sundays in my house. In fact, for me, meal prep occurs whenever I have time, and my kitchen needs a restocking of fresh homemade meals and snacks. 

This mid-week meal prep was a crowd favorite, and the banana bread was a hit with my little one (and me!).

When is the best time/day for you to prepare meals? 

(And yes, my shirt magically has food spatter on it because I am cooking and a mom 😂 )
