In today’s Private Chef & Personal Assistant Dia In today’s Private Chef & Personal Assistant Diaries: Living in Germany, I’m sharing a few client favorites — aka meals my toddler has actually loved lately. 

I should warn you… this client has a thing for spice. Which means many of the meals on this list are a little bold for the average toddler (and some adults, too).

But I’m not complaining, it just means I get to cook the flavorful dishes I love, and he usually joins me at the table like a tiny food critic.

✨ Here’s what’s been on the menu:
* Dutch baby pancake with berries (not pictured)
* Silky tortilla soup
* Mango salmon bowls
* Spicy pork & veggie stir fry
* Blueberry coconut banana bread
* Homemade smash burgers + fries
* And yes… boxed mac & cheese, with chef-approved upgrades

Let’s breakdown the spring roll recipe from my l Let’s breakdown the spring roll recipe from my latest video! I think this is the perfect healthy, light, and refreshing dish the whole family will love (or learn to love for those picky babies and toddlers). 

Spring Roll Ingredients:
Spring roll wrappers
Vermicelli noodles 
Fresh herbs: mint, basil, cilantro 
Carrots; julienne
Cucumber; julienne
Protein cut thinly ( I used cubed steak and tofu seasoned with salt, pepper, and garlic) 

Peanut Sauce Ingredients 
2 heaping tablespoons of peanut butter 
1.5 teaspoons of fish sauce
1 teaspoon sriracha
1-2 tablespoons of warm water

Being a private chef to a toddler means adjusting Being a private chef to a toddler means adjusting menus, repackaging leftovers like they’re fine dining, and occasionally negotiating the plating of dinner 😅.

In today’s Private Chef & Personal Assistant Diaries: Living in Germany, here’s what my client (aka my two-year-old) ate. And how I made each dish toddler-friendly without losing the flavor.

✨ Meals included✨
• Yogurt bowl with homemade granola + chia jam
• Silky tortilla soup (with added coconut milk) + DIY tortilla chips
• Beef & tofu spring rolls

But I was barely awake, so we had to circle back a little later when I had a plan.⁠
⁠
On the menu: Poached eggs in tomato sauce with wilted spinach, garlic, and cumin, inspired by a recipe from my Food & Wine cookbook.⁠
⁠
He asked for cereal… but I like to keep mornings savory when possible. Plus, the real win? I managed to hide the spinach in all that rich tomato sauce.⁠

Served it with leftover homemade focaccia. It was client-approved. So it’s officially being added to our menu rotation. ⁠
⁠

🍳 Poached Eggs in Tomato Sauce⁠
⁠
Ingredients:⁠
⁠
- 1 tbsp butter⁠
- 1 small onion, chopped⁠
- 1 garlic clove, minced⁠
- 2 handfuls of spinach⁠
- 1 (14 oz) can crushed tomatoes (with juices)⁠
- ½ tsp cumin⁠
- Salt & pepper to taste⁠
- 4 eggs⁠
- Fresh parsley (for garnish)⁠
- Grilled bread or focaccia (for serving)⁠

Directions:⁠
⁠
1. In a saucepan, melt butter. Add onion + garlic. Sauté over medium heat until soft and golden (about 8 mins).⁠
2. Add spinach and cook until wilted.⁠
3. Stir in crushed tomatoes and cumin. Bring to a light boil, then reduce heat and simmer for 10 minutes to thicken.⁠
4. Season with salt and pepper.⁠
5. Make 4 small wells in the sauce and crack eggs into them. Cover and simmer on low until whites are set and yolks are runny (about 7 mins). If you prefer your yolks fully set, cook them for about 10 mins, or until the yolks are more to your preference. ⁠
6. Garnish with parsley. Serve immediately with toasted bread or focaccia.⁠
